Pla Pla Salmon

aka Thai Herbal Salmon Salad.  It's light, healthy and extremely easy to put together.  Served with fresh lemongrass, shallots, kaffir lime leaves, mint leaves and coriander and you have an uncomplicated flavourful and absolutely gorgeous one dish meal!

Ingredients provided:

Salmon, jasmine rice, shallots, lemongrass, chili padi, garlic, kaffir lime leaves, mint leaves, coriander, olive oil, fish sauce, white pepper, brown sugar, lime juice and sesame oil. 

What you'll need:

Oven, oven proof dish, medium sized pot.
