This is a generations old family recipe from Bandung, Indonesia. The rich and savoury taste is unique to the region, different from the Javanese (more tangy) and Padang (sweeter) versions. This time-honoured rendang recipe, taking about 3 hrs from preparation to final dish, is served as the centrepiece for many family celebrations like birthdays and private parties. A much-requested dish, it is a special treat that always pleases young and old.
We use grated fresh coconut, fried without oil on low fire for a continuous 20 mins. The entire dish is lovingly braised for at least 2 hrs to bring out its juicy, rich flavour and aroma. This dish pairs extraordinarily well with basmati rice, and is at once comfort food and luxury.
